The Goods:
- 5 cup Dried Black Beans
- 4 Green Peppers
- 4 Onions
- 3 clove Garlic
- 2 Bay leaves
Spices:
- 1 tbs Cumin
- 1 tbs Coriander
- 2 tsp Smoked Paprika
- Soak dried beans overnight (2:1 ratio with 5 tbs salt)
- Drain and rinse beans
- Mince all the veg
- Medium High heat
- Sweat onions w/ 1 tbs salt
- 10 min
- Add Garlic/Green Peppers
- Add Spices
- 2 min
- Add Beans
- Add water to cover
- Add Bay leaves
- Once boiling, reduce to simmer
- 5 hours
- Salt to taste
Serve over rice, good with hot sauce, sour cream, and scallions
